How to make the lazy chef’s Eton mess

Eton Mess is a classic English dessert that’s light, sweet, made with freshly whipped cream, juicy berries, and crushed, crispy vanilla meringue. This is bound to be your new favorite dessert for summer. This is a simple recipe (the hardest part is making the meringue) and all of the components can be prepared in advance.
The Lazy Chef Quick & Easy Eton mess:

Ingredients
- 6 meringue (store-bought)
- 250ml Whipped cream
- 6 tbsp castor sugar
- Mixed Berry Compote
- Fresh mixed berries
- juice of ½ lemon
- 3 Tbsp water
Instructions

- Mixed Berry Compote
- 1 ½ cups mixed berries
- 2 tbsp castor sugar
- juice of ½ lemon
In a saucepan, on medium heat, add mixed berries, castor sugar, lemon juice, and water. Stir occasionally until all the sugar dissolves and the mixed berries become soft. Roughly mash the berries using a fork and remove off the heat as the compote thickens. Allow to completely cool down before adding to the cream.
Whipped cream
-In a bowl, whip cream using an electric mixer until soft peaks form. Add castor sugar a spoon at a time. Add a spoon of the mixed berry compote liquid and fold it into the cream.

Eton Mess assembly
Roughly crush 4 meringues, In your serving bowls or glass spoon some berry compote, add cream, crushed meringues, a layer of fresh berries, repeat the process twice. Place a full meringue on top and spoon over the left berry compote.

Serve cold.
